15 Dry Bean Mix - Soup Beans

15 Bean Soup Recipe with Ham and Sausage

Although there are some beans in this mix that do not require soaking, I go ahead and soak them all. I mean who would want to pick out certain beans to soak, right?!? Soaking also gets rid of some of the, ahem, gases.

The longer beans soak, the more gas producing compounds break down. Pardon me. Soaking also reduces cooking time.

There are basically four important steps to using any dry beans:
1) Clean
2) Rinse
3) Soak
4) Cook

Clean and rinse beans and place in a large bowl, add 1/2 of the stock and fill the rest with fresh water until the beans are covered. Reserve the rest of the stock for cooking the beans. Cover the bowl and place in the refrigerator to soak overnight.

15 Bean Soup Mix Recipe

How to cook bean soup
Remove your beans from soaking and pour into a colander and rinse well.

In a large pot or Dutch oven add 1 tablespoon of butter and heat over medium heat. Next add the diced onion, celery, and bell pepper and sauté until onions begin to become translucent.

Add the remaining stock to the pot along with the salt, pepper, onion powder, bay leaves. Add  your beans, water, and flavor packet. Stir to combine all and bring to a boil. If you want to add a bit of zest to your beans try adding a splash of lemon juice or chili powder.

Reduce and cover pot leaving a vent. You may have to add more water during the cooking process due to evaporation. Cook 1 hour on a medium low heat.

Add the smoked sausage during the last 30 minutes of cooking to heat through.

Remember to remove your bay leaves (if using) when done.

If making the soups beans in your Crock Pot: Sauté the vegetables in a skillet the add the remaining ingredients to your slow cooker and cook on low for 6 to 8 hours. Allow enough cooking time until the beans are tender.

Hi Julia, I'm a new subscriber to your blog and am loving it. Thank you for the inspiration during these trying and uncharted times. I will definitely visit your site as often as possible to help. In regards to this delicious looking soup that caught my eye I had a question. There are several photos, pot with veggies and beans and some sort of meat in with all the goodness, and aforementioned meat in the cutting board photo. I looked and looked again and didn't see a mention of "the meat" anywhere. Is it salt pork? Please let me know as I have a bag of 15 bean Ham Beens in my pantry and would love to whip this up. I'm your northern neighbor by the way, up in Charlotte, NC. Look forward to hearing back from you.

Dawn, Thank you so much for being here! I'm so happy that you stopped by!! I just snapped some new photos of this recipe that I originally published a few years ago. The other meat is a seasoning meat - country ham pieces to be specific. It adds a bit of extra flavor while they cook. I hope that you're well up in Charlotte! We used to live in Lake Wylie, S.C. just south of Charlotte so I know that area well. Take care and I hope that you enjoy this recipe. ~Julia
