Preparing Eggs Sunny Side Up

Add butter or cooking oil to a small skillet and heat over medium.

Crack one egg into a small bowl or ramekin.

When the butter is melted, add the egg.

Cook approximately 2 minutes and use a spatula or spoon to work the cooking fat over the top of the egg. This ensures the whites cook thoroughly. Pay particular attention to the whites just around the yolk.

Remove from skillet and serve.

If I’m serving sunny-side up eggs, I allow whoever is eating them to season with salt and pepper themselves so you get a beautiful egg-cellent presentation.

Repeat the above process for each egg you wish to serve sunny-side up.

To turn it into over-medium eggs: After the egg whites have cooked through, flip the egg and cook an additional 10-20 seconds then remove from skillet.
