Fresh Stewed Tomatoes with Pasta

Fresh stewed tomatoes with pasta and fresh basil, a 10 minute meal.

Ingredients

  • 6 Vine Ripened Roma Tomatoes
  • Salt & Cracked Black Pepper to taste
  • 2 tbs Fresh Basil chopped and divided
  • 1 Clove of Minced Garlic optional
  • 1/2 tbs Olive Oil
  • 2 c Cooked Spaghetti Pasta

Instructions

  • Dice the tomatoes then add them to a small skillet over medium heat.
  • Season with salt and cracked black pepper.
  • Next, add half of the chopped basil leaves then stir to combine.
  • Next, add the minced garlic (if using).
  • Continue to cook while the pasta cooks about 10 minutes then remove from the heat.
  • Spoon over cooked pasta and garnish with the remaining chopped basil.
  • Drizzle olive oil over to finish then serve.

Notes

This recipe is easily customized to suit your particular taste. Add a protein, such as chicken or top with grated cheese.
Servings can be adjusted by how much pasta you choose to cook.
Leftover stewed tomatoes can be frozen for another meal.
