Glazed Baby Carrots with Honey and Ginger

Delicious glazed baby carrots are a wonderful addition to the dinner plate.

Ingredients

  • 32 oz Cut and Peeled Baby Carrots
  • 3-4 c Water
  • 2 tbs Butter
  • 1 tbs Peeled and Grated Fresh Ginger
  • 1/4 c Honey
  • Pinch of Kosher Salt
  • Fresh Parsley optional

Instructions

  • Begin by adding the water to a large pot and bring to a boil.
  • When the water begins to boil, add the carrots. Bring everything back to a simmer and cook until tender, 5-7 minutes.
  • Drain the cooked carrots in a colander and set aside.
  • Place the cooking pot back on the stove top over medium heat.
  • Next, add the butter to the pot and melt.
  • Next, add the honey and freshly grated ginger and stir to combine the glaze.
  • Add a pinch of salt to enhance the flavors of the glaze.
  • Bring the glaze mixture to a simmer and cook for 2-3 minutes. 
  • Return the cooked carrots back to the pot with the glaze. Turn the carrots making sure to get them all coated well with the honey ginger glaze.
  • Simmer while turning the carrots in the glaze mixture for 5 minutes.
  • Serve hot.

Notes

Grate ginger on small/medium side of a box grater
