Homemade Tomato Soup Recipe

Creamy and delicious homemade tomato soup is a classic meal and great served along with a grilled cheese sandwich.

Ingredients

  • 6.5 c Strained Tomatoes I used Pomi brand, two 24.46 oz
  • 2 tbs Butter
  • 1 Onion diced
  • 2 Carrots finely diced
  • 1 c Vegetable Stock
  • 1/2 tsp Basil chopped
  • 1/2 tsp Dried Oregano
  • Salt and Cracked Black Pepper to taste
  • Heavy Cream optional

Instructions

  • Add butter to a soup pot and melt over medium heat.
  • Add the chopped onion and diced carrot and sauté until the onions become translucent.
  • Add the strained tomatoes, stock, herbs and seasonings.
    Simmer for 30 minutes.
  • Use an immersion blender to blend all of the vegetables into a creamy consistency. This can also be done in a food processor, being careful while working with the hot soup. 
  • Serve with a swirl of heavy cream, if desired, along with a grilled cheese sandwich for a perfect meal.
