Southern Tomato Gravy
This old-fashioned Southern Tomato Gravy is a comforting classic made with crispy bacon, diced tomatoes, and a simple flour gravy. Rich, savory, and full of homemade flavor, it's delicious served over warm buttermilk biscuits for breakfast, brunch, or an easy Southern supper.

In a large skillet over medium heat, cook the bacon until crisp. Transfer the bacon to a paper towel-lined plate and reserve for another use or crumble it into the gravy, if desired.
Leave approximately 1/4 cup of the bacon drippings in the skillet. If you have more than 1/4 cup, carefully pour off the excess.
Sprinkle the flour into the hot bacon drippings and whisk continuously for 1 to 2 minutes to cook out the raw flour taste.
Slowly pour in the diced tomatoes with their juices, whisking until smooth. Gradually whisk in the water until well combined.
Season with the kosher salt and cracked black pepper.
Bring the gravy to a gentle simmer over medium heat, stirring frequently, until it has thickened to your desired consistency, about 10 to 15 minutes.
Taste and adjust the salt and pepper if needed.
Serve hot over freshly baked buttermilk biscuits. Garnish with sliced green onion and halved cherry tomatoes, if desired.
Serving size is about 3/4 cup.

Bacon drippings: You’ll need about ¼ cup of bacon drippings for the gravy. If your 5 slices of bacon don't render quite enough, add a little butter to make up the difference. I usually end up with too much bacon grease however and have to spoon some out of the skillet.
Milk or cream is optional: My tomato gravy is traditionally made with water, but honey, if you like yours creamier, replace some of the water with milk or add a splash of cream. There's no wrong in making it the way you enjoy it.
Season to taste: Bacon can be salty, so taste the finished gravy before adding additional salt.
