BBQ Chicken Meatloaf
Easy meatloaf made with ground chicken and topped with barbecue sauce.

- 1 Bell Pepper diced
- 1 Medium Onion diced
- 2 lb Ground Chicken
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Garlic Powder
- 1 c Old Fashioned BBQ Sauce divided
- 1 c Plain Bread Crumbs
- 2 Eggs
Preheat oven to 375℉
Prepare a sheet pan by covering with aluminum foil. Lightly spray the foil with cooking spray. Since the chicken is a leaner meat, it tends to stick if the surface isn't lightly coated.
In a mixing bowl - combine the bell pepper, onion, ground chicken, seasonings, bread crumbs, eggs and 1/2 cup of the barbecue sauce.
I find the best way to mix everything for a meatloaf is to get my hands dirty and dig in! Smoosh and mash until everything is thoroughly mixed together. I know it's icky but somebody's got to do it.
Remove meat mixture from the mixing bowl and form into a loaf on the sheet pan.
After 1 hour, remove the meatloaf and brush the top of the meatloaf with the remaining 1/2 cup of barbecue sauce.
Return to the oven and bake an additional 10 minutes.
Remove from the oven and allow to rest 10 minutes before slicing.
Place into the oven and bake for 1 hour.
