BBQ Chicken Meatloaf

Easy meatloaf made with ground chicken and topped with barbecue sauce.

Ingredients

  • 1 Bell Pepper diced
  • 1 Medium Onion diced
  • 2 lb Ground Chicken
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1 c Old Fashioned BBQ Sauce divided
  • 1 c Plain Bread Crumbs
  • 2 Eggs

Instructions

  • Preheat oven to 375℉
  • Prepare a sheet pan by covering with aluminum foil. Lightly spray the foil with cooking spray. Since the chicken is a leaner meat, it tends to stick if the surface isn't lightly coated.
  • In a mixing bowl - combine the bell pepper, onion, ground chicken, seasonings, bread crumbs, eggs and 1/2 cup of the barbecue sauce.
  • I find the best way to mix everything for a meatloaf is to get my hands dirty and dig in! Smoosh and mash until everything is thoroughly mixed together. I know it's icky but somebody's got to do it.
  • Remove meat mixture from the mixing bowl and form into a loaf on the sheet pan.
  • After 1 hour, remove the meatloaf and brush the top of the meatloaf with the remaining 1/2 cup of barbecue sauce.
  • Return to the oven and bake an additional 10 minutes.
  • Remove from the oven and allow to rest 10 minutes before slicing.
  • Place into the oven and bake for 1 hour.
