A simple meatloaf made with ground chicken and topped with barbecue sauce is a delicious variation to your standard meatloaf.
A comfort food for many, this BBQ Chicken Meatloaf will not disappoint. If you’re a fan of the meatloaf sandwich, you’ll love this recipe!
Old Fashioned BBQ Sauce Recipe:
- 1/2 c Molasses
- 1 c Ketchup
- 1/4 c Yellow Mustard
- 1/4 c White Vinegar
- 2 tbs Worcestershire Sauce
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/4 tsp Cayenne Pepper
- 1/2 tsp Hot Sauce, such as Texas Pete
Ground Chicken Meatloaf

- 1 Bell Pepper, diced
- 1 Medium Onion, diced
- 2 lb Ground Chicken ?
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Garlic Powder
- 1 c Old Fashioned BBQ Sauce, divided
- 1 c Plain Bread Crumbs
- 2 Eggs

BBQ Chicken Meatloaf

Easy meatloaf made with ground chicken and topped with barbecue sauce.
Ingredients
- 1 Bell Pepper, diced
- 1 Medium Onion, diced
- 2 lb Ground Chicken
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Garlic Powder
- 1 c Old Fashioned BBQ Sauce, divided
- 1 c Plain Bread Crumbs
- 2 Eggs
Instructions
- Preheat oven to 375℉
- Prepare a sheet pan by covering with aluminum foil. Lightly spray the foil with cooking spray. Since the chicken is a leaner meat, it tends to stick if the surface isn't lightly coated.
- In a mixing bowl - combine the bell pepper, onion, ground chicken, seasonings, bread crumbs, eggs and 1/2 cup of the barbecue sauce.
- I find the best way to mix everything for a meatloaf is to get my hands dirty and dig in! Smoosh and mash until everything is thoroughly mixed together. I know it's icky but somebody's got to do it.
- Remove meat mixture from the mixing bowl and form into a loaf on the sheet pan.
- After 1 hour, remove the meatloaf and brush the top of the meatloaf with the remaining 1/2 cup of barbecue sauce.
- Return to the oven and bake an additional 10 minutes.
- Remove from the oven and allow to rest 10 minutes before slicing.
- Place into the oven and bake for 1 hour.
