Berry Berry Salad

A delicious mixed green salad with fresh seasonal berries dressed in a raspberry vinaigrette

Ingredients

The Salad

  • 2 Bags of a Spring Mix Salad
  • 1 cups Strawberries stemmed and sliced
  • 1/2 cup Blueberries
  • 1/2 cup Raspberries
  • 1/2 cup Blackberries
  • Crumbled Chèvre aka Goat Cheese or Mascarpone

The Dressing

  • 1 cup Raspberries preferably fresh but thawed frozen are ok
  • 2 tbs Lemon juice fresh squeezed
  • 2 tbs Red Wine or Cider vinegar
  • 1 tbs Sugar
  • 1 tbs Honey
  • 1/4 cup light olive oil
  • A Pinch of Salt
  • Cracked Black Pepper

Instructions

Salad

  • On a chilled plate add some of the spring salad mix. Top with a few of each berry type and crumbled cheese.

Dressing

  • Place raspberries in a bowl and crush with a fork. Whisk in
  • remaining ingredients until blended.
  • Cover and chill. Whisk just before serving.
