The Salad
- 2 Bags of a Spring Mix Salad
- 1 cups Strawberries stemmed and sliced
- 1/2 cup Blueberries
- 1/2 cup Raspberries
- 1/2 cup Blackberries
- Crumbled Chèvre aka Goat Cheese or Mascarpone
The Dressing
- 1 cup Raspberries preferably fresh but thawed frozen are ok
- 2 tbs Lemon juice fresh squeezed
- 2 tbs Red Wine or Cider vinegar
- 1 tbs Sugar
- 1 tbs Honey
- 1/4 cup light olive oil
- A Pinch of Salt
- Cracked Black Pepper
Dressing
Place raspberries in a bowl and crush with a fork. Whisk in
remaining ingredients until blended.
Cover and chill. Whisk just before serving.
