Berry Berry Salad, a beautiful colorful salad. Strawberry season has begun here in South Carolina. Click the link for some Strawberry Facts
you may not know about. Summer is the time some of the other berries come into season here. Of course these days you can get fresh berries anytime of year at your local grocery stores. That is why I am not calling this salad a Summer
berry salad. It’s Berry, Berry Salad….well because it has lots of berries in it. It’s a fresh plate of yummy and it looks pretty too. It’s so easy to put this one together too. I serve this one with a Raspberry Vinaigrette dressing.
- 2 Bags of a Spring Mix Salad
- 1 cups Strawberries, stemmed and sliced
- 1/2 cup Blueberries
- 1/2 cup Raspberries
- 1/2 cup Blackberries
- Crumbled Chèvre (aka Goat Cheese) or Mascarpone
On a chilled plate add some of the spring salad mix. Top with a few of each berry type and crumbled cheese.
- 1 cup Raspberries, preferably fresh but thawed frozen are ok
- 2 tbs Lemon juice, fresh squeezed
- 2 tbs Red Wine or Cider vinegar
- 1 tbs Sugar
- 1 tbs Honey
- 1/4 cup light olive oil
- A Pinch of Salt
- Cracked Black Pepper
Place raspberries in a bowl and crush with a fork. Whisk in
remaining ingredients until blended. Cover and chill. Whisk just before serving.
If you prefer not to make your own dressing there are plenty of bottled options
on the market available.
