Cheesy Ground Beef and Cabbage Casserole Recipe

A delicious clean out the fridge shop the pantry dinner made with what you have on hand to make this delicious cheesy ground beef and cabbage casserole with other vegetables.

Ingredients

  • 2 lbs. Ground Beef: cooked crumbled and drained well
  • 1 Small Head of Cabbage thinly sliced
  • 1 Onion diced
  • 3 Bell Peppers diced (I had red, orange & green - any color will do)
  • 1 cup of Mushrooms sliced
  • 8 oz. Sharp Cheddar Cheese grated and divided
  • 10½ oz. Cream of Mushroom Condensed Soup
  • ½ c. Milk
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 350°F.
  • In a large mixing bowl: combine the cooked ground beef, cabbage, vegetables and half of the shredded cheese. Next add the cream of mushroom soup, milk and season with salt and pepper; stir to combine.
  • Transfer the casserole mixture to a rectangle baking dish and top with the remaining shredded cheese.
  • Bake for 1 Hour until hot and bubbly.

Notes

The leftover ground beef and cabbage casserole can be re-heated the next day in a 350°F oven until hot.
