Crock Pot Fiesta Beef

- 2-2.5 lb Beef Roast
- 1/2 c Water
- 10 oz Zest Steak Sauce similar to Heinz 57 Sauce
- Salt and Pepper to taste
- 1 Onion diced
- 1/2 c Diced Celery
- 3 Small Bell Peppers diced (used multiple colors to add interest)
- 1/2 c Sliced Mushrooms
- 10 oz Can of Ro-Tel mild or original undrained
- 1/4 tsp Dried Thyme
- 1/4 tsp Garlic Powder
- Begin by adding the beef roast to your slow cooker and add water. Cover with zesty steak sauce and season with salt and pepper. 
- Dice vegetables and add to the slow cooker. Top with Ro-Tel tomato mixture, dried thyme and garlic powder. 
- Start cooking on the high setting for one hour while you get ready for the day. Reduce to the low setting and cook 6-8 hours until you can shred the beef easily using two forks. Recipe can be cooked on the high setting 4-5 hours. Once the beef is shredded, stir to incorporate everything together. 
- Serve beef mixture on tacos, with a side of rice, or on a sandwich
