Crock Pot Fiesta Beef

A delicious beef roast recipe made in the slow cooker perfect served with rice or as a filling for tacos

Ingredients

  • 2-2.5 lb Beef Roast
  • 1/2 c Water
  • 10 oz Zest Steak Sauce similar to Heinz 57 Sauce
  • Salt and Pepper to taste
  • 1 Onion diced
  • 1/2 c Diced Celery
  • 3 Small Bell Peppers diced (used multiple colors to add interest)
  • 1/2 c Sliced Mushrooms
  • 10 oz Can of Ro-Tel mild or original undrained
  • 1/4 tsp Dried Thyme
  • 1/4 tsp Garlic Powder

Instructions

  • Begin by adding the beef roast to your slow cooker and add water. Cover with zesty steak sauce and season with salt and pepper.
  • Dice vegetables and add to the slow cooker. Top with Ro-Tel tomato mixture, dried thyme and garlic powder.
  • Start cooking on the high setting for one hour while you get ready for the day. Reduce to the low setting and cook 6-8 hours until you can shred the beef easily using two forks. Recipe can be cooked on the high setting 4-5 hours. Once the beef is shredded, stir to incorporate everything together.
  • Serve beef mixture on tacos, with a side of rice, or on a sandwich
