Crock Pot Fiesta Beef

- 2-2.5 lb Beef Roast
- 1/2 c Water
- 10 oz Zest Steak Sauce similar to Heinz 57 Sauce
- Salt and Pepper to taste
- 1 Onion diced
- 1/2 c Diced Celery
- 3 Small Bell Peppers diced (used multiple colors to add interest)
- 1/2 c Sliced Mushrooms
- 10 oz Can of Ro-Tel mild or original undrained
- 1/4 tsp Dried Thyme
- 1/4 tsp Garlic Powder
Begin by adding the beef roast to your slow cooker and add water. Cover with zesty steak sauce and season with salt and pepper.
Dice vegetables and add to the slow cooker. Top with Ro-Tel tomato mixture, dried thyme and garlic powder.
Start cooking on the high setting for one hour while you get ready for the day. Reduce to the low setting and cook 6-8 hours until you can shred the beef easily using two forks. Recipe can be cooked on the high setting 4-5 hours. Once the beef is shredded, stir to incorporate everything together.
Serve beef mixture on tacos, with a side of rice, or on a sandwich
