Crock Pot Fiesta Beef is an easy dump and go slow cooker meal. Today was a day that I decided to try something new. In an attempt to meet the needs and offer a variety of recipes that appeal to readers, I felt it was time. The thing is, I don’t really cook in the Crock Pot. Some of you may be gasping right about now.
I do own a slow cooker. I use it to make appetizers, keep food warm at parties, or to make candy. Making a meal in a slow cooker however is not something I grew up with. Over the past few months I experimented by making a pot of beans in my Crock Pot and then moved on to a traditional style roast. That turned out great so it’s time to develop a recipe to share.
Admittedly, I was a bit nervous on how things would turn out. All in all, I can say it turned out great. This recipe is delicious and can be used a variety of ways, something a busy family will love.
Slow Cooker Fiesta Beef
Ingredients
- 2-2.5 lb Beef Roast
- 1/2 c Water
- 10 oz Zest Steak Sauce (similar to Heinz 57 Sauce)
- Salt and Pepper to taste
- 1 Onion, diced
- 1/2 c Diced Celery
- 3 Small Bell Peppers, diced (used multiple colors to add interest)
- 1/2 c Sliced Mushrooms
- 10 oz Can of Ro-Tel (mild or original undrained)
- 1/4 tsp Dried Thyme
- 1/4 tsp Garlic Powder
Slow Cooker Roast
Step 1: To begin, add the beef roast to your slow cooker and add water. Cover with zesty steak sauce and season with salt and pepper.
In the Next Step: Dice vegetables and add to the slow cooker. Top with Ro-Tel tomato mixture, dried thyme and garlic powder.
Crock Pot Recipes
Step 3: Start cooking on high setting for one hour while you get ready for the day. Reduce to the low setting and cook 6-8 hours until you can shred the beef easily using two forks. Recipe can be cooked on the high setting 4-5 hours. Once the beef is shredded, stir to incorporate everything together.
