Ham & Hashbrown Breakfast Casserole

A delicious and easy breakfast casserole with ham and potatoes with egg and cheese.

Ingredients

  • 2 lb bag of Diced Hash Brown Potatoes
  • 2 c Ham cut into cubes (use 1 lb of cooked breakfast sausage if you prefer)
  • 1 Onion diced
  • 1 Bell Pepper diced
  • 12 oz Cheddar Cheese grated
  • 6 Eggs
  • 3 c Milk
  • Salt & Pepper to taste

Instructions

  • Preheat oven to 350°F
  • Add the cubed ham and hashbrowns to a large mixing bowl.
  • Dice an onion and bell pepper and add to the hashbrown mixture along with the shredded cheese then stir to combine.
  • Spray a baking dish with cooking spray, then add the hashbrown mixture.
  • Season with salt and pepper.
    In a mixing bowl to beat six eggs together with three cups of milk and pour over the hashbrown mixture in the casserole.
  • Bake for 1 hour and 15 minutes or until the center is set.
