Ham & Hashbrown Breakfast Casserole

- 2 lb bag of Diced Hash Brown Potatoes
- 2 c Ham cut into cubes (use 1 lb of cooked breakfast sausage if you prefer)
- 1 Onion diced
- 1 Bell Pepper diced
- 12 oz Cheddar Cheese grated
- 6 Eggs
- 3 c Milk
- Salt & Pepper to taste
Preheat oven to 350°F
Add the cubed ham and hashbrowns to a large mixing bowl.
Dice an onion and bell pepper and add to the hashbrown mixture along with the shredded cheese then stir to combine.
Spray a baking dish with cooking spray, then add the hashbrown mixture.
Season with salt and pepper.
In a mixing bowl to beat six eggs together with three cups of milk and pour over the hashbrown mixture in the casserole.
Bake for 1 hour and 15 minutes or until the center is set.
