Ingredients
2cCooked Mashed Sweet Potatoes
1.25cGranulated Sugar
1/4cButtermelted
2Eggs
1tspPure Vanilla Extract
1/4tspSalt
1/4tspGround Cinnamon
1/4tspGround Ginger
1cEvaporated Milk
9" Frozen Pie Shell
Instructions
Preheat oven to 350°F
In a mixing bowl combine the sweet potatoes, sugar, melted butter, eggs, vanilla, salt, cinnamon and ginger. Mix together with a hand mixer until well combined.
Next, add the evaporated milk and mix to combine.
Add the pie filling mixture to the pie crust and place into the oven.
Bake 45 minutes or until done. Center of the pie should be set when done.
Allow to cool before serving. Top with whipped cream, if desired.
