Pork Medallions with Gravy

- 2 tsp Olive Oil
- 1 Onion diced
- 1-2 lbs. Pork cubed
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Garlic Powder
- 3 c Chicken Stock
- 1 Packet Pork Gravy Mix I used McCormick
- 1 10.5 oz. Cream of Onion Condensed Soup
A skillet or pot with a lid is recommended. Heat a large skillet over medium heat.
Add olive oil, diced onion, and cubed pork. I used boneless pork chops that I cut up.
Sauté until the onions become translucent and the pork is mostly cooked through, 5-7 minutes. Season with salt, pepper and garlic powder.
Add the chicken stock. Cover and simmer for 30 minutes.
Add gravy mix packet and stir to combine. Next, add cream of onion soup and combine. Cover and simmer on low for an additional 30 minutes, stirring occasionally.
