Pork Medallions with Gravy

Tender and delicious pork medallions with gravy is an easy tasty family meal.

Ingredients

  • 2 tsp Olive Oil
  • 1 Onion diced
  • 1-2 lbs. Pork cubed
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • 3 c Chicken Stock
  • 1 Packet Pork Gravy Mix I used McCormick
  • 1 10.5 oz. Cream of Onion Condensed Soup

Instructions

  • A skillet or pot with a lid is recommended. Heat a large skillet over medium heat.
  • Add olive oil, diced onion, and cubed pork. I used boneless pork chops that I cut up.
  • Sauté until the onions become translucent and the pork is mostly cooked through, 5-7 minutes. Season with salt, pepper and garlic powder.
  • Add the chicken stock. Cover and simmer for 30 minutes.
  • Add gravy mix packet and stir to combine. Next, add cream of onion soup and combine. Cover and simmer on low for an additional 30 minutes, stirring occasionally.
