Ingredients
3cCooked Chickendiced
1small Oniondiced or use 1/2 a medium onion
2Boiled Eggschopped
2tbsp.Dill Pickle Cubes
Salt & Freshly Cracked Black Pepper to taste
Dash Dried Thyme
1/3 - 1/2Mayonnaise
1/4cCelerydiced (optional)
Instructions
Combine the cooked chicken with the remaining ingredients in a mixing bowl and stir until combined. Cover and refrigerate until ready to serve.
Notes
Boil or oven roast two bone in chicken breast until done and pull the meat and diced it up. (Feel free to use leftover rotisserie chicken if you have it on hand.)
