Simple Chicken Salad Recipe

Simple chicken salad recipe made with just a few ingredients is a tasty spread for sandwiches or crackers.

Ingredients

  • 3 c Cooked Chicken diced
  • 1 small Onion diced or use 1/2 a medium onion
  • 2 Boiled Eggs chopped
  • 2 tbsp. Dill Pickle Cubes
  • Salt & Freshly Cracked Black Pepper to taste
  • Dash Dried Thyme
  • 1/3 - 1/2 Mayonnaise
  • 1/4 c Celery diced (optional)

Instructions

  • Combine the cooked chicken with the remaining ingredients in a mixing bowl and stir until combined. Cover and refrigerate until ready to serve.

Notes

Boil or oven roast two bone in chicken breast until done and pull the meat and diced it up. (Feel free to use leftover rotisserie chicken if you have it on hand.)
