I love to make this simple chicken salad for lunches. I have another chicken salad recipe that I call “Fancy Chicken Salad” that I use for parties and I’ll post that sometime in the future. This simple recipe is just that, easy with minimal ingredients, but still delicious.
The easy sandwich salad recipe would be my go to that I have most often. With just a few ingredients it is still a delicious meal.
Ingredients
- 2 1/2 – 3 c Chicken, diced
- 1 small Onion, diced or use 1/2 a medium onion
- 2 Boiled Eggs, chopped
- 2 tbs Dill Pickle Cubes
- Salt & Freshly Cracked Black Pepper to taste
- Dash Dried Thyme
- 1/3 – 1/2 Mayonnaise
- 1/4 c Celery, diced (optional)
Simple Chicken Salad Recipe
Simple chicken salad recipe made with just a few ingredients is a tasty spread for sandwiches or crackers.
Ingredients
- 3 c Cooked Chicken, diced
- 1 small Onion, diced or use 1/2 a medium onion
- 2 Boiled Eggs, chopped
- 2 tbsp. Dill Pickle Cubes
- Salt & Freshly Cracked Black Pepper to taste
- Dash Dried Thyme
- 1/3 - 1/2 Mayonnaise
- 1/4 c Celery, diced (optional)
Instructions
- Combine the cooked chicken with the remaining ingredients in a mixing bowl and stir until combined. Cover and refrigerate until ready to serve.
Notes
Boil or oven roast two bone in chicken breast until done and pull the meat and diced it up. (Feel free to use leftover rotisserie chicken if you have it on hand.)
