Southern Egg Salad For A Crowd

Classic Southern egg salad for parties and luncheons

Ingredients

  • 12 Hard Boiled Eggs
  • 1//2 c Mayonnaise
  • 1 tbs Dijon Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tsp Dried Dill
  • 1 tbs Chopped Chives
  • 12 Mini Croissant Rolls or 12 Slices White Sandwich Bread

Instructions

  • Dice boiled eggs and add to a mixing bowl.
  • Add the mayonnaise, Dijon mustard, and seasonings to the diced eggs and stir to combine.
  • Makes a dozen mini croissant sandwiches.
  • If using bread slices, king sliced is preferable. Add the egg salad to half of the bread slices and topping with another slice and remove crust.
  • Cut each sandwich into 4 mini triangle tea sandwiches. Will make 24 mini sandwiches using this method.
