Turkey Noodle Soup Recipe

Delicious turkey noodle soup made with leftover roasted turkey with egg noodles in a rich flavorful broth.

Ingredients

  • 3 c Cooked Turkey diced or shredded
  • 1 c Celery diced
  • 1 Onion diced
  • 12 oz. Package Frozen Sliced Carrots
  • 3 Sprigs Fresh Thyme
  • 4 c Chicken Bone Broth or Turkey Stock
  • 8 c Water
  • 1 tsp Salt
  • 1/3 tsp Black Pepper
  • Dash of Poultry Seasoning optional
  • 2 tbsp. Butter
  • 1 Pkg Fine Egg Noodles

Instructions

  • Begin by adding 2 tablespoons of butter to a soup pot or large stock pot and heat over medium-high heat.
  • Next, add the diced onions and celery. Sauté until translucent, about 5 minutes.
  • Next, add the broth or stock, water, carrots, thyme sprigs, salt, pepper, and poultry seasoning.
  • Bring to a boil and add turkey. Simmer for 20 minutes.
  • Finally, add the egg noodles and simmer an additional 4-5 minutes or until pasta is tender.
