Turkey Noodle Soup

Quick and easy Turkey Noodle Soup is a great way to use some of that leftover holiday turkey. The result is a delicious, comforting meal!


  • 3-4 c Cooked Turkey, diced or shredded
  • 1 c Celery, diced
  • 1 Onion, diced
  • 1 12 oz Package Frozen Sliced Carrots
  • 3 Sprigs Fresh Thyme
  • 4 c Chicken Bone Broth or Turkey Stock
  • 8 c Water
  • 1 tsp Salt
  • 1/3 tsp Black Pepper
  • Dash of Poultry Seasoning (optional)
  • 2 tbs Butter
  • 1 Pkg Fine Egg Noodles
Add 2 tablespoons of butter to a soup pot or large stock pot. Heat over medium-high heat.
Add diced onions and celery. Saute until translucent, about 5 minutes.
Add broth or stock, water, carrots, thyme sprigs, salt, pepper, and poultry seasoning.
Bring to a boil and add turkey. Simmer for 20 minutes.
Add egg noodles and simmer an additional 4-5 minutes.
