Quick and easy Turkey Noodle Soup is a great way to use some of that leftover holiday turkey. The result is a delicious and comforting meal!
While there is nothing like the Thanksgiving holiday meal and enjoying the delicious leftovers for days we get tired of eating the same thing over and over. That is the time to re-invent some of those leftover ingredients into new dishes.
Leftover turkey can be utilized in so many ways. Casseroles, turkey burritos and soups are popular options.
Ingredients
- Leftover Cooked Holiday Turkey, diced or shredded
- Celery, diced
- Onion, diced
- Package Frozen Sliced Carrots
- 3 Sprigs of Fresh Thyme
- Chicken Bone Broth or Turkey Stock
- Water
- Salt
- Black Pepper
- Dash of Poultry Seasoning (optional)
- Butter
- 1 Pkg Fine Egg Noodles
This delicious soup has all of your favorite ingredients that you might find in the chicken version. The carrots, celery and onion help to create a rich nutritious broth with the roasted turkey pieces.
Turkey Noodle Soup Recipe
Delicious turkey noodle soup made with leftover roasted turkey with egg noodles in a rich flavorful broth.
Ingredients
- 3 c Cooked Turkey, diced or shredded
- 1 c Celery, diced
- 1 Onion, diced
- 12 oz. Package Frozen Sliced Carrots
- 3 Sprigs Fresh Thyme
- 4 c Chicken Bone Broth or Turkey Stock
- 8 c Water
- 1 tsp Salt
- 1/3 tsp Black Pepper
- Dash of Poultry Seasoning (optional)
- 2 tbsp. Butter
- 1 Pkg Fine Egg Noodles
Instructions
- Begin by adding 2 tablespoons of butter to a soup pot or large stock pot and heat over medium-high heat.
- Next, add the diced onions and celery. Sauté until translucent, about 5 minutes.
- Next, add the broth or stock, water, carrots, thyme sprigs, salt, pepper, and poultry seasoning.
- Bring to a boil and add turkey. Simmer for 20 minutes.
- Finally, add the egg noodles and simmer an additional 4-5 minutes or until pasta is tender.
