South Carolina Mustard Sauce (Carolina Gold)

In this post I am sharing how to make authentic South Carolina Mustard Sauce, also known as Carolina Gold

In the South, we know our barbecue and every region has mastered its own sauce. Whether it be a vinegar spicy blend, a sweeter sticky blend, white bbq sauce or a zesty sweet mustard sauce….you can’t go wrong, they’re all delicious!

Here we are in the middle of January with a few weeks of winter left to go here in SC and I am already dreaming of those warm weather barbecue soirees. 

What is Carolina BBQ Sauce?

Carolina Gold gets its name due to the deep golden color of the sauce. A blend of everyone’s favorite yellow mustard with a bit of sweet, vinegar and spices. 

South Carolina mustard BBQ sauce is a delicious treat. Use as a marinade, a cooking sauce or as a finishing sauce.

What Do You Serve With Barbecue?

Just to be clear, when we say barbecue in the South, that does not mean simply cooking food on a grill. Barbecue is a very specific type of meal. The term “barbecue” describes the menu perfectly.

We’ll be expecting a plate of some type of smoked beef, chicken or some pulled pork piled on a plate with slaw, hushpuppies and fries. It will also be expected that there are a few squirt bottles filled with a few choices of sauce.

How Do You Make Authentic Carolina Gold Sauce?

To make this mustard base BBQ sauce, here’s what you’ll need: yellow mustard, brown sugar, apple cider vinegar, molasses, Worcestershire sauce, mustard powder, onion powder, cayenne powder, hot sauce and salt. 

Throw all of this in a pot, mix it up and bring to a simmer. After a few minutes of simmering to develop the flavor, it’s done. 

Easy enough, right?!? Let it cool down and transfer to a squirt bottle.

South Carolina Mustard Sauce (Carolina Gold)

Authentic Carolina Gold Sauce, a South Carolina mustard barbecue sauce. This sauce is great as a marinade, for grilling or as a finishing sauce.

Ingredients

  • 1/2 c Yellow Mustard
  • 1/3 c Light Brown Sugar packed
  • 1 tbs Molasses
  • 1/4 c Apple Cider Vinegar
  • 1 tsp Worcestershire Sauce
  • 1 tsp Mustard Powder
  • 1 tsp Onion Powder
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Salt
  • 1 tsp Hot Sauce I used Texas Pete

Instructions

  • Combine all ingredients together in a sauce pan.
  • Bring to a simmer over low heat.
  • Simmer for 20 to 25 minutes to develop the flavor of the sauce.
  • Allow to cool then transfer to a bottle.
  • Store in the refrigerator.

Drooling over this because it looks so amazing. Thinking about switching out the brown sugar for coconut sugar and making this for us. Would be awesome over some shredded pork or chicken and stuffed into a giant baked potato!
