Hey, y’all! If you’re looking for a down-home, easy-peasy meal that’ll have the whole family coming back for seconds, you just found it! These Easy Cheesy Loose Meat Sliders are a little bit like those famous Midwestern Maid Rite sandwiches, but with a creamy, melty twist—because we’re adding plenty of cheese, of course!

Not only do these tasty cheeseburger sliders make an easy meal, they also make a great appetizer that is sure to be a hit at your gathering of friends and family! Who wouldn’t love a little cheeseburger slider on game day? Or, just because it is a Saturday?

Now, loose meat sandwiches are something special. They’re like a sloppy joe without the tomato sauce, just seasoned ground beef piled high on a soft bun. But we’re takin’ it up a notch with a creamy, cheesy sauce that wraps around every bite like a warm Southern hug. Yes, we’re using Velveeta, which will cause some of y’all to faint, but get over it honey…this is so good! Plus, it is not like we’re putting Velveeta in something everyday for those of you who claim not to like it.

These sliders are quick to whip up, budget-friendly, and perfect for busy weeknights, game days, or casual get-togethers. Serve ‘em up with some crispy fries, a side of coleslaw, or even just a few pickles, and you’ve got yourself a meal that’s easy as pie—but way more savory!

Best Loose Meat Sliders

You will love how quick and easy it is to prepare these loose meat sandwiches. You will get twelve if you make them slider style with my easy recipe, or serve the meaty mixture on a hamburger bun and you’ll get four sandwiches.

I was inspired to make these myself after seeing my friend Mandy’s recipe (South Your Mouth). Each time I saw her “White Trash Sliders”, as she lovingly calls them, I’d think how good they look. For whatever reason, it took me a few years before I actually made them. All I can say is that I wish I’d made them a lot sooner. I was missing out.

I had to put my own little twist on things, as usual. My family loved them, I love them, and you will too! After you make them, you might decide to put your own twist on things too and add or take away to suit your taste bud delights!

Tips for Preparing these Cheesy Sandos

  1. Use a handheld potato masher or meat separator to break up the ground meat well. This helps make small meat crumbles that will marry well with all that melty cheese.
  2. To keep the meaty filling moist, drain away the excess fat leaving just a tiny bit for flavor and moistness. The small amount of Worcestershire also helps keep the meat mixture moist. If you would rather use a splash of beef broth instead of the Worcestershire sauce.
  3. The best cheese to use for this is Velveeta. I know, I know, some of y’all have a fit about that, but it really is wonderful in this recipe. If your heart just will not allow you to use good ole Velveeta, then go with what makes you happy as long as you get a melted cheesy result. A combo of cheddar cheese, Monterrey Jack, and a slice of American might be a great stand in.
  4. Can I make the filling ahead? Yes, prepare it, refrigerate, and gently heat when needed. I prepare all of the sliders and arrange them on a platter. The meat mixture could be kept warm in an appetizer crock if everyone will be making their own.

Simple Ingredients for Easy Apps or a Flavorful Meal

Here is what you will need to make the loose hamburger sandwiches:

  • Thinly Sliced Onion
  • Ground Beef – an 80/20 Ground Chuck preferred.
  • Black Pepper
  • Onion Powder
  • Cayenne Pepper – just a dash, we love the kick of heat, but optional. 
  • Velveeta Cheese – cut into cubes.
  • Baker Rolls, Hawaiian Rolls, or Slider Buns – for serving.
  • Pickle Slices – optional, but after I tried a spicy pickle slice, highly recommend. Dill pickle chips would be great too.

Seasonings are always to taste and if you want to add other ingredients, such as diced bell pepper or whatever, then feel free to make it your own.

Helpful Kitchen Tools

  • Large Skillet – To cook the onions, brown the ground beef, and melt the cheese.
  • Wooden Spoon or Spatula – For stirring and breaking up the meat as it cooks.
  • Potato Masher or Meat Separator Tool (Optional) – Helps create small, even crumbles for the perfect loose meat texture.
  • Measuring Spoons – For accurately measuring seasonings.
  • Knife & Cutting Board – To slice the onions and pickles (if using whole pickles).
  • Serrated Bread Knife – for slicing buns easily.

Step-by-Step Instructions to make these Cheesy Loose Meat Sliders

In a large skillet over medium heat, add the sliced onions and cook for 2-3 minutes until softened and fragrant. If you don’t care for onion, just leave it out.

Next, add the ground beef to the skillet with the onions. Cook, breaking up the meat until browned and crumbled. Drain any excess grease if needed. I prefer an 80/20 meat blend, so there is usually a little fat that needs to be removed.

The next step is to season! Add in the Worcestershire sauce, black pepper, onion powder, and cayenne (if using). Cook for another 1-2 minutes to let the flavors meld. Taste the meat mixture and adjust seasonings, if needed.

Reduce heat to low and add the cubes of Velveeta cheese, stirring until completely melted and coating the beef mixture evenly.

Rather than separating all of the slider rolls before assemble, I just slice them all in half, then spread the cheesy meat mixture over the bottom section, place the top on then use my bread knife to separate them into individual sandwich sliders.

I think that doing it that way makes it a little less tedious and easier.

What to Serve with Cheesy Loose Meat Sliders

If you’re serving the cheesy meat sliders as an appetizer, serve them alongside other appetizers that you might love. A few favorites are a good cheesy spread with crackers, chips and dips (try my friend Norine’s Cowboy Queso), or chicken wings.

    Made this last night. Very good! But you failed to mention how much Worcestershire sauce!
    I winged it with a couple of tablespoons.
    Turned out great!
