Country Green Beans Recipe

 
 
Country Green Beans or Southern Style Green Beans, cooked low and slow, and full of flavor. You can make this with fresh green beans or canned.
As my grandmother would say when using a canned vegetable, “We have to doctor it up”. This green beans side dish recipe is the hands down number one requested side for all holiday meals at our house.
 
You may also here this style of green bean dish referred to as “cooked to death” green beans.  One thing for sure, they are so delicious and a signature Southern dish.
 
Ingredients
 
  • Green Beans – Fresh (2 lbs stemmed and snapped), Canned – (2 Family Size Cans, Cut Green Beans)
  • 1 Carton Unsalted Chicken Stock
  • 1 tsp Bacon Drippings aka bacon grease
  • 6 pieces Country Ham Bits or you can use fat back
  • 2 tbs Minced Onion – if using fresh onion use 1/2 a small onion minced
  • 1/4 tsp Onion Powder
  • 1/2 tsp Cracked Black Pepper
  • 1 tsp Salt or to taste
  • Water
  • 1 can Whole New Potatoes (optional)- to add near the end of cooking

If you are using fresh beans, wash them, stem and snap beans into pieces. With cans drain the cans and fill with water and drain again.
 
In a stock pot add the bacon grease and seasoning meat (country ham bits)
 
 
 
Add green beans, minced onion, onion powder, salt and pepper to the pot.
 
Pour in 1 carton of chicken stock and add water as needed until beans are covered.
 
Cover with a lid allowing space for steam to escape.
 
Slowly bring the beans to a light boil then turn down to medium low to simmer – about 2 hours

Classic Southern green beans cooked with ham and potatoes are a favorite side dish

Ingredients

  • Green Beans - Fresh (2 lbs stemmed and snapped), Canned - (2 Family Size Cans, Cut Green Beans)
  • 1 Carton Unsalted Chicken Stock
  • 1 tsp Bacon Drippings aka bacon grease

Instructions

  1. If you are using fresh beans, wash them, stem and snap beans into pieces.
  2. If using canned green beans then drain the cans and fill with water and drain again.
  3. In a stock pot add the bacon grease and seasoning meat (country ham bits).
  4. Heat the pot to melt the bacon fat and release flavor of the seasoning meat.
  5. Add the green beans, minced onion, onion powder, salt and pepper to the pot.
  6. Add 1 carton of chicken stock and add water as needed until beans are covered.
  7. Cover with a lid allowing space for steam to escape.
  8. Slowly bring the beans to a light boil then turn down to medium low to simmer - about 2 hours
  9. Add canned new potatoes the last half hour of cooking (optional).

How much by weight country ham do y all use?

I've never weighed out how much country ham or any type of seasoning meat used to cook green beans. My best guess would be around 2 ounces or so.
