Pork Cordon Bleu Recipe

In this post I am sharing the recipe for Pork Cordon Bleu (works well with chicken too).

The meaning of a cordon bleu (schnitzel) is a dish of meat wrapped around cheese then breaded fried. You’ll find that chicken cordon bleu is the more popular version of this dish but it can also be made with pork or veal. Pork Cordon Bleu is delicious and when oven baked, it is a bit healthier than the fried version.

I have to give a shout out to my friends at Thames Farm, a local South Carolina farm for their delicious pasture raised Berkshire pork. The pork cutlets I get from them are perfectly thin for making stuffed or rolled dishes, which save work for me.

When buying pork cutlets (or chicken breasts) from the grocery store, you’re going to find them a bit thicker and you will need to pound them out flat and thin for this recipe. Try looking for the breakfast pork chops, which are usually already on the thin side.

As you can see from the photo below, the cutlets from my local farm are already perfect for this dish requiring now extra prep work. Time savers are so wonderful!

This pork cordon bleu dish is easy to prepare for weeknight meals and special enough for guests.

Pork Cordon Bleu Recipe

Here’s what you’ll need:

  • Thin Pork Cutlets
  • Sliced Swiss Cheese
  • Sliced Deli Ham
  • All Purpose Flour
  • 1/2 tsp Salt
  • Cracked Black Pepper, to taste
  • Eggs
  • Panko Bread Crumbs
  • Italian Seasoning
  • Butter
  • Cooking Spray

Step 1: Place butter into a casserole dish and place into a cold oven. Preheat oven to 375°F. As the oven comes to temperature the butter will melt in the bottom of the casserole.

Step 2: Layer your pork tenderloin cutlets with the Swiss cheese and ham slices.

Step 3: Roll the cordon bleu pieces up.

Step 4: Use three bowls to create the dredging station.

  • In mixing bowl one add the flour, salt and pepper.
  • In the next bowl add two eggs and beat with a fork.
  • Add the panko bread crumbs and Italian seasoning to the third bowl.

Step 5: Dredge each cordon bleu roll into the flour mixture, next into the beaten eggs, and finally in the panko bread crumbs mixture and set aside.

Step 6: Remove the casserole dish with melted butter from the hot oven and place the pork cordon bleu rolls in the the dish. Lightly spray the top of the cordon bleu rolls with cooking spray so the bread crumbs don’t burn during baking.

Step 7: Place into the oven and bake for 35-45 minutes. If the bread crumbs need more browning at the end of cooking, turn on the broiler the last few minutes.
