In this post I’ll be sharing a delicious Ham Potato Kale Soup Recipe.
January is national soup month so it seemed fitting for my first recipe post of the year to be for….. well, soup.
A delicious, creamy and velvety potato soup with baby kale, vegetables and ham. The ham was leftover from our new year day meal. You could use sausage instead if you like.
Potato kale soup is so easy to prepare and is ready in about half an hour.
Soups are a comfort food. They’re budget friendly and can be made with just about anything that you have on hand.
Potato and Kale Soup
Doesn’t that look like a wonderful meal on a chilly winter evening?
The baby kale came from our garden. It may seem odd but I don’t mind tender baby kale but I don’t care for mature kale. Hubs loves kale no matter what.
Spinach would be a great option if you prefer that over kale.
Kale Potato Soup without Cream
Can we talk about pantry staples for a second? I keep real potatoes on hand most all of the time but they do spoil eventually.
So that I have some good versatile pantry staples on hand, I also like to keep a few of the dollar packets of instant potato flakes on hand. I used some of those potato flakes to thicken this soup so there’s no cream in it.
This potato and kale soup starts with your typical soup starter veggies with carrots, onion and celery. I used chicken stock for the liquid because it does add an extra layer of flavor but water would be okay too.
Ham Potato Kale Soup Recipe
Starting with a dab of butter, the veggies go into a soup pot to sauté for a few minutes.
Simple Potato Kale Soup with Ham
Once the starter veggies have softened a bit then I add the peeled and diced potatoes and ham, the stock and a little seasoning. I just used some salt and pepper in this kale potato soup recipe.
Comfort Food Soup
Bring to a simmer and cook until the potatoes are tender then add in the baby kale (or spinach).
Once the greens are tender, which only takes a few short minutes, then add in those potato flakes to thicken the soup up a bit.
Soups are Budget Friendly
Enjoy a bowl of your delicious homemade soup on its own or with crackers or cornbread. It sure is a hearty good meal that warms the soul.

Ham Potato Kale Soup Recipe
Ingredients
- 1 Tbs. of Butter
- 1 c Celery sliced
- 1 c Carrots peeled and sliced
- 5 c Russet Potatoes peeled and cubed ( 4 medium to large potatoes)
- 1 c Chopped Ham or Sausage optional
- 8 c Chicken Stock
- 2 c Baby Kale or Spinach
- Kosher Salt and Cracked Black Pepper to taste
- 1/2 c Dried Potato Flakes 2 ounce packet
Instructions
- Melt the butter in a soup pot over medium heat.
- Add the onion, celery and carrot to the pot; stir and sauté, about 5 minutes until tender.
- Next add the diced potatoes and ham; cover with stock and bring to a simmer. Season according to taste and simmer for 15 minutes until the potatoes are tender.
- Add the kale and potato flakes and cook 5 more minutes.
- Taste the soup and adjust for seasoning if needed.
- Serve hot with additional toppings, such as sour cream or shredded cheese, if desired.
