Fried yellow squash with that bit of crunch on the outside, oh so good. Easy to make too. Pan fried to perfection the good old fashioned country way.
I have always been fond of yellow squash. Perhaps that is because it was my first vegetable that I grew myself as a child. After caring for that vegetable plant and harvesting those fresh squash I wanted all things yellow squash in my life.
This recipe is a classic and a favorite for many besides just me. So grab yourself a few summer squash and let’s get to cooking!
Ingredients:
- 1-2 Yellow Summer Squash, medium to large, sliced into 1/4″ pieces
- 1 c Flour, all purpose
- 1/2 c corn meal
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 Egg
- 1/4 c Buttermilk
- 2 tsp Water
- Oil for frying, 1/4″ in the bottom of a medium skillet

Fried Squash
A classic Southern style side dish recipe of pan fried squash with a crispy cornmeal and flour coating.
Ingredients
- 1-2 Yellow Summer Squash, medium to large, sliced into 1/4" pieces
- 1 c Flour, all purpose
- 1/2 c corn meal
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 Egg
- 1/4 c Buttermilk
- 2 tsp Water
- Oil for frying, 1/4" in the bottom of a medium skillet
Instructions
- Begin by adding the oil to a skillet and heat over medium heat.
- Next, combine the flour, corn meal, and seasonings in a small bowl.
- In another bowl, beat an egg and whisk in buttermilk and water.
- Next, dredge each squash piece in the seasoned flour/cornmeal mixture, then into the wet mixture, then back to to the flour/cornmeal mixture.
- Add the coated squash pieces to the heated skillet and brown on each side. This will take about 2 minutes per side. Be careful not to overcook or the texture of the squash will become mushy.
- Serve hot

I had some summer squash to use from my garden and...oh my my my!!! Your recipe was everything I was hoping for! I did add a bit of seasoning salt, but otherwise made it just as directed. I had some left over lemon dill yogurt sauce that I had made from the other night and it was simply delightful together! Thank you for posting this recipe. I've no doubt I"ll be using it to make some fried green tomatoes soon!!!!

What if I don’t have buttermilk can I sub it for heavy cream or whole milk?
