Crock Pot Cheesy Chicken and Noodles

Crock Pot Cheesy Chicken and Noodles is a creamy and delicious meal made with spaghetti pasta, cheddar cheese, chicken and a few other ingredients that the entire family will love. When there’s cheese and noodles involved you can’t really go wrong, right?!?

I am learning what a valuable tool a slow cooker can be for today’s busy families. Growing up in a family where a slow cooker wasn’t used it is a new territory for me creating recipes. I love being able to offer a variety of recipes on the blog.

Personally, I really only  used a slow cooker to make appetizers, candy or keep foods warm at parties. I plan to incorporate more Crock Pot meals into my meal planning. After a busy day in the garden or other activities it’s nice to have a home cooked meal ready for supper when you don’t feel like standing over the stove.

The slow cooker meals that I have created so far are versatile too. The Crock Pot Chicken and Spaghetti Noodles is no exception. You could easily add vegetables to this recipe to switch things up, such as fresh onion, carrots or mushrooms.

Crock Pot Cheesy Chicken and Noodles

Ingredients

  • 16 oz Chicken or Vegetable Stock
  • 10.5 oz Condensed Cream of Chicken Soup
  • 1 tsp Better than Bouillon – Chicken
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tbs Dried Minced Onions
  • 1-1.5 lb Boneless Skinless Chicken Breasts
  • 2 c Milk
  • 1 lb Pot Size Spaghetti Pasta
  • 8 oz Shredded Sharp Cheddar Cheese

Step 1: Add the stock, cream of chicken soup, better than bouillon and seasonings to the slow cooker and whisk to combine. Next, add the chicken breast pieces. Cover and cook on the low setting for 4 hours.

Step 2: Remove the cooked chicken from the slow cooker to a plate and shred using two forks. Set aside.

Step 3: Add the milk and spaghetti pasta (if you don’t have “pot size” cut spaghetti, just break up regular spaghetti pasta into smaller pieces) to the crock pot and give a stir. Add half of the shredded cheese and top with the shredded chicken. Top everything off with the remaining shredded cheese. Cover and cook for another hour, stirring every few minutes to separate the noodles. Add more milk if needed to maintain a creamy consistency. Serve hot. Garnish with fresh chives or scallions if desired.

This turned out really delicious! I cooked the noodles by themselves after removing the chicken to shred it--primarily because I have never cooked pasta or rice in a slow cooker before. I wanted to have a good handle on cooking speed, consistency, sticking together, etc. Added the chicken and cheese back into the fully cooked noodles. Totally tasty recipe! Thank you! :-)
