Cucumber Tomato Onion Salad Recipe

In this post I am sharing an easy Cucumber Tomato Onion Salad Recipe.

Y’all, I am so grateful that we had a beautiful spring this year. It was a “true” spring season that we haven’t had in years. Usually we go straight to summer here in South Carolina.

We were able to get outdoors and enjoy being outside with all that’s been happening in the world this year. We even got my raised garden beds built. I’ve wanted them since we moved into this house and mission accomplished.

I already have lots of tomatoes on the vine and anxiously awaiting for them to ripen.

My vegetable garden has been such a blessing and given me so much joy this year. I finally found the perfect spot for growing my vegetables and the garden is doing much better this year as a result.

Easy Summer Salad Recipe

Now that summer is here and it is hot and humid, there is nothing better than having refreshing cool sides on hand for meals.

I try to keep some sort of melon cut up in the fridge and a cool side dish, like a cuke salad.

They’re so refreshing and offer good hydration during our hot summer months.

Simple Marinated Cucumber Salad with Tomatoes Salad Recipe

The fresh vegetables in this colorful cucumber salad are low in calories and high in healthy vitamins. 

It is easy to grow fresh vegetables in your own garden too so you have almost everything you need on hand to make this simple recipe.

I love using Vidalia onions in this salad while they’re in season this time of year.

To make this easy salad recipe takes just a few ingredients. You can keep it simple or jazz it up a little if you like.

for visual interest when sharing this dish at family meals, I like to use colorful and different varieties of tomatoes.

I also used regular garden cucumbers (peeled) and English seedless cucumbers (unpeeled).

If you don’t have all of that on hand, no worries. Just use whatever and keep it simple with you have on hand.

Marinated Summer Salad

This salad is better if made a few hours ahead of time and chilled to allow it to marinate in the simple homemade vinaigrette. It just gets better and better absorbing the flavor from the simple vinegar dressing.

After I prep my vegetables and toss them together in a mixing bowl, I add my marinade ingredients in one of my canning jars and give it a shake then pour over the salad.

If you think about it while it’s chilling in the fridge, give it a stir occasionally to give all the veggies time to swim in the tangy dressing.

Yield: 1 Salad Side Dish

Cucumber, Tomato and Onion Salad Recipe

Tomato, Cucumber and Vidalia Onion Salad using fresh vegetables marinated in a simple vinegar dressing is a cool and refreshing summer side dish.

Prep Time 15 minutes
Additional Time 4 hours
Total Time 4 hours 15 minutes

Ingredients

Salad

  • 8 c Sliced Cucumbers (Around 4 Cucumbers)
  • 4 c Tomatoes, cut into chunks
  • 1 Vidalia Onion, peeled and thinly sliced

Dressing

  • 1 c White Vinegar
  • 1 c Distilled Water
  • 2 tbs Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Sugar
  • Cracked Black Pepper, to taste
  • 1/2 tsp Dried Dill

Instructions

  1. Prep your vegetables and place in a large mixing bowl. For this recipe I used a variety of cucumbers and tomatoes for added visual interest (see notes).
  2. Next, prepare your dressing by adding all of the ingredients to a jar with a lid and shake to combine then pour over the vegetables.
  3. Stir to coat the vegetables in the vinegar dressing then cover and chill until ready to serve; allow to marinate at least 4 hours.
  4. Enjoy the salad as a light snack, light lunch or a side for your meal.

Notes

This recipe can be kept simple by using just one type of cucumber and tomato.

I used garden cucumbers that I peeled and one English cucumber that I left the thin tender peel on. The cucumbers were medium to large in size.

To add even more visual interest I score the sides of the peeled garden cukes with a fork.

I also used small colorful salad tomatoes and a couple of large slicing tomatoes chopped.
