Nanny’s Old Fashioned Potato Soup
In this post I am sharing the recipe for my Nanny’s Old Fashioned Potato Soup.
My grandmother, Dorothy (Nanny), was an accomplished cook. Aren’t most grandmothers? I loved her dearly and the wonderful meals she made. I’ll never forget her and how special she was to me or the wonderful meals she made with love.
Food is a part of our fond memories, just as much as it is a necessity for us. This potato soup is comforting and delicious…..and brings back wonderful memories of Nanny.
Here’s what you’ll need to make this potato soup: (Full details in printable recipe card)
- Russet Potatoes (med/large), peeled and cut into cubes
- Onion, finely diced
- Bacon Fat
- Chicken Stock
- Water
- Salt
- Black Pepper
- Dried Thyme
- Butter
- Heavy Cream

Nanny’s Old Fashioned Potato Soup
Ingredients
Soup
- 5-9 Russet Potatoes med/large, peeled and cut into cubes
- 1 Onion finely diced
- 1 tsp Bacon Fat
- 4 c Chicken Stock
- 6 c Water
- 2 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Dried Thyme
- 4 tbs Butter
- 1 c Heavy Cream
Thickening Slurry Mixture
- 1/2 c Water
- 2 tbs Corn Starch
Instructions
- Begin by heating a soup pot or dutch oven over medium high heat.
- Next, add the bacon fat and diced onion, saute onions until they begin to soften, about 5 minutes.
- Next, add the chicken stock, water and potatoes.
- Season with salt, pepper & dried thyme.
- Bring to a boil and cook for 20 minutes.
- Prepare a slurry to thicken the soup. In a measuring cup, add 1/2 cup of cold water. Next, add 2 tablespoons of cornstarch and mix well. Next, add the thickening slurry to the soup mixture and stir to combine.
- Next, add the butter and heavy cream.
- Turn heat down to medium low and simmer for 15 minutes, stirring occasionally.
- Serve hot. Garnish with shredded cheese and crumbled bacon bits if desired.

Potato soup is filling on its own but can also be a part of a meal with different dishes. You may also choose to serve potato soup as the starter course of your meal if you’re hosting a dinner party.
