Blackened Chicken Pasta Alfredo

In this post I am sharing how to prepare a semi homemade Blackened Chicken Pasta Alfredo.

Update: January 14, 2020 – Since I originally shared this recipe nearly six years ago, I no longer work outside the home so recommend making your own homemade Alfredo sauce. If you’re in a crunch for time, the store bought sauce will still work just fine.

2 – Boneless Skinless Chicken Breasts
Red Bell Pepper
Small Red Onion
Penne Pasta
Blackening Seasoning
dried Thyme
dried Italian Seasoning
Salt & Pepper to taste
8 oz. Alfredo Sauce (store bought)
3 tbsp. Olive Oil
Parsley for garnish

Chicken Penne with Creamy Alfredo

This is one of those recipes that I use when I need to put dinner together quick so I get a little help from some store bought items.

I start by cutting the red bell pepper and onion into strips and set aside.

Next, cut the chicken breasts into cubes. I find that cutting the chicken breasts is a little easier if they are still slightly frozen.

Add 3 tablespoons of olive oil to a skillet and heat over medium then add the chicken.

Next season the chicken mixture by adding your blackened seasoning ~ I used Zatarains Blackened Seasoning but you can certainly make your own. Recipe follows for a simple blackened seasoning. Add the rest of the seasonings and saute chicken mixture.

Easy Family Dinner Pasta Meal

In a large pot bring water to a boil to cook the pasta. Remember to salt your water before adding the pasta. Cook the pasta according to package directions.

When the chicken is nearly done add your vegetables to the skillet and saute. cook the vegetables while you boil the pasta.

After you’ve drained your pasta add your Alfredo sauce to the pasta and combine. I used a store bought Alfredo Sauce for this recipe. Again you can certainly make your own but the jar was a time saver for a quick ready meal.

Add the chicken and vegetables to the pasta and combine. This will give you a nice spicy Alfredo pasta dish. Garnish with parsley, if desired. You can have this dish ready in 30 minutes. Quick, easy, and delicious.


Blackened Seasoning:
2 tablespoons of paprika, 1 tablespoon of onion powder, 2 tsp salt, 1 tsp black pepper, 1/4 tsp dried thyme, 1/4 tsp dried basil, and 1/4 tsp dried oregano


Homemade Alfredo Sauce: 1 stick butter, 1 c Heavy Cream, 2 c grated Parmesan, salt & pepper

Ingredients

  • 2 – Boneless Skinless Chicken Breasts

  • 1 – Red Bell Pepper seeded and cut into strips
  • 1 – Small Red Onion diced
  • 1/4 – tsp Blackening Seasoning
  • 1/4 – tsp dried Thyme
  • 1/4 – tsp dried Italian Seasoning
  • Salt & Pepper to taste
  • 1 lb – Penne Pasta
  • 8 oz Alfredo Sauce
  • Parsley for garnish optional

Instructions

  • Add olive oil to a large skillet; add chicken and peppers along with seasonings and herbs then cook until the chicken is done.
  • Combine the chicken mixture with the cooked pasta then add Alfredo sauce and stir to combine.
  • Garnish with parsley, if desired, when serving.
