Southern Sweet Corn Fritters

In this post I’m sharing how to make classic Southern Sweet Corn Fritters.

 


Have you ever had a corn fritter? They’re a delicious sweet and savory snack food in the South. How can you not love anything with sweet corn it it?

Where did corn fritters originate? While today corn fritters are a common Southern dish, they originated in the Native American cuisine. 

What is the difference between a hush puppy and a corn fritter? Some folks consider them to be one and the same. Not in this house however or my neck of the woods as far as I can tell. A hush puppy is a fried corn meal ball. Corn fritters actually have corn kernels in them. 

Are corn fritters an appetizer, snack, side dish or vegetable? I’ll leave this one up to y’all! It could be either or all of the above. I do enjoy these golden nuggets with a bit of dipping sauce myself, like an appetizer or snack.

How do you reheat corn fritters? Southern Sweet Corn Fritters can be made ahead and frozen. Just pop them in the oven to reheat. 

Country Corn Fritters

What are corn fritters made of? Since corn fritters have been around…forever…well you can imagine that the ingredients are pretty basic. Here’s what you’ll need: Eggs, flour, salt, corn kernels (fresh off the cob is best), vegetable oil…and to give this recipe a delicious twist…some jalapeno and Parmesan cheese. 

Corn nugget dipping sauce? I serve these corn fritters with a side of sour cream, lime wedges and garnished with a few scallions. So delicious!

Can you use canned corn for fritters? You can if you like, just rinse and drain well. I do recommend fresh cut from the cob when in season though.

Southern Sweet Corn Fritters

Sweet and savory Southern style corn fritters.

Ingredients

  • 2 Large Eggs beaten
  • 1/4 c All Purpose Four
  • 3 tbs Finely Grated Parmesan Cheese
  • 1/2 tsp Kosher Salt
  • 2 c Fresh Corn Kernels
  • 2 Scallions thinly sliced
  • 1 Jalapeno seeded, finely chopped (optional)
  • 2 tbs Vegetable Oil
  • Sour Cream and Lime Wedges for serving

Instructions

  • Pulse the eggs, flour, Parmesan and kosher salt in a food processor to combine. (If you don’t want to dirty up the food processor, just work your stirring arm)
  • Next, add the corn kernels, scallion, and jalapeno then pulse 2 – 3 more times.
  • Heat cooking oil in a large non-stick skillet over medium heat.
  • Working in batches, cook heaping tablespoon fulls of batter until golden brown, about 4 minutes per side until all of the batter is used up.
  • Serve with sour cream and lime wedges, if desired.
