Can you believe that I’ve never made homemade tomato soup until recently? It’s true! I was inspired by the recipe from my blogger friend, Stacy Lyn, and her new book. I connected with Stacy Lyn last year and she is just the most kind person. Although we’ve never met in person, I’ve enjoyed our online conversations. You just know when you meet good people and she is just that.
Back in November, I ordered “Harvest” to add to my collection of cookbooks. Being a blogger myself, the holiday season is a busy one in my line of work. It wasn’t until after Christmas that I was able to open the book and read through the pages.

I went through the entire book in one evening admiring the stories, the beautiful pages, photos and recipes. I found this book was not just a cookbook but a life experiences book so personally shared by Stacy Lynn about her life, a way of living, that also included delicious recipes.
She offers information on gardening, preserving, foraging, bee keeping, backyard chickens, food from the pasture and wild game with recipes in each section along the way. Honestly, I’ve never seen a book quite like this. I truly love it!
Besides inspiring me to make up my first batch of tomato soup, I’m also going to be planting my first garden this year and start composting. I’m really glad to have Stacy Lyn’s tips to help me along the way.

Now, let’s talk about homemade tomato soup. I’m not really sure why it never occurred to me to make tomato soup before. I also never would have guessed the addition of carrot and onion that get blended in to give you such an incredible soup.
I seriously would have only thought tomatoes and seasonings. Nope! This was the best and I’ll be making it again. It was a wonderful meal that we enjoyed for two days, paired with a grilled cheese of course.
I did have to improvise on the recipe because we don’t have fresh garden tomatoes this time of year. You can find Stacy Lyn’s original recipe using the freshest tomatoes from the garden in her book. I’ll be trying her recipe as soon as I harvest my own fresh tomatoes.
Homemade Tomato Soup
Step One: Add butter to a soup pot and melt over medium heat
Step Two: Add the chopped onion and diced carrot and sauté until the onions become translucent.
Step Three: Add the strained tomatoes, stock, herbs and seasonings.
Step Four: Simmer for 30 minutes
Step Five: Use an immersion blender to blend all of the vegetables into a creamy consistency. This can also be done in a food processor, being careful while working with the hot soup.
Creamy Homemade Tomato Soup Recipe
Serve with a swirl of heavy cream, if desired, along with a grilled cheese sandwich for a perfect meal.

Homemade Tomato Soup Recipe
Ingredients
- 6.5 c Strained Tomatoes I used Pomi brand, two 24.46 oz
- 2 tbs Butter
- 1 Onion diced
- 2 Carrots finely diced
- 1 c Vegetable Stock
- 1/2 tsp Basil chopped
- 1/2 tsp Dried Oregano
- Salt and Cracked Black Pepper to taste
- Heavy Cream optional
Instructions

- Add the strained tomatoes, stock, herbs and seasonings.
