New Potatoes with Parsley Butter Sauce

In this post I’m sharing how to make a simple side dish of New Potatoes with Parsley Butter Sauce.
Although this is a very simple recipe, it is also elegant, making it perfect for company. New potatoes are such a fun side dish and can be prepared a variety of ways. This happens to be one of my favorite. It adds a nice touch to the meal.
 
I love how easy it is to prepare this potato side dish.  As long as you have the small red potatoes, you probably already have everything else that you need on hand to make this dish.
 
Here’s what you’ll need:
 
  • Baby New Red Potatoes
  • Stick of Butter
  • Fresh Chopped Parsley (dried parsley flakes will work too)
  • Cracked Black Pepper & Salt

Red New Potatoes

 
Peel the center of your red potatoes if desired. This is completely optional. I like the  final presentation of the dish with peeling the center away.
 
 
Boil the potatoes in water until tender – about 15 minutes.
 
 
Melt your stick of butter and add the fresh chopped parsley, cracked pepper, and salt. Pour the parsley butter mixture over the potatoes and stir to combine.

New Potatoes with Parsley Butter Sauce

New potatoes with parsley butter sauce is an easy and elegant side dish

Ingredients

  • 1 LB of Baby New Red Potatoes
  • 1 Stick of Butter
  • 2 TBS of Fresh Chopped Parsley
  • Cracked Black Pepper & Salt

Instructions

  • Peel around the center of each potato, if desired. You can leave the peels completely on if you prefer.
  • Cover the potatoes with water in a pot and bring to a boil.
  • Boil the potatoes over medium heat 15 minutes or until tender.
  • Remove from heat and drain.
  • Melt the butter and add the fresh herbs and seasonings. Mix to combine.
  • Pour evenly over the cooked potatoes and stir.
  • Serve hot.
