New Years Southern Black Eyed Peas Recipe
- 1 pound of Dried Black Eye Peas
- A Ham Hock or Country Ham Cooking Pieces
- Bacon Grease
- salt
- black pepper
- Cayenne Pepper (optional)
- small Onion , diced (optional)
- Chicken Stock
In a large pot add the bacon grease and ham hock, warm over medium heat until the pork pieces begin to sizzle.
Add the peas and cover 1″ above with chicken stock. You can also combine chicken stock and water to get the desired amount of liquid.
Add seasonings. Bring pot to a boil and then turn the heat down to medium low and cover to simmer until peas are tender. Don’t cover completely to allow steam to escape.
Near the end of cooking, taste the peas for tenderness and adjust the seasonings if needed.

Black eyed peas, also known as field peas, are among the favorite traditional sides for the new years day meal.
Ingredients
- 1 lb Dried Black Eye Peas

- 1 1/2 tsp Salt, or to taste
- 1 tsp Black Pepper, or to taste
- 1/4 tsp Cayenne Pepper (optional)
- 1 small Onion , diced (optional)

- Add the onion and seasonings. Bring pot to a boil and then turn the heat down to medium low and cover to simmer until peas are tender - 1½ - 2 hours. Don't cover completely to allow steam to escape.
- Serve hot.
Notes
Soaking is not required for black eyed peas but can be done to aid with faster cooking.
Peas can be cooked in the Crock Pot for 8 to 10 hours on low until tender.
