In this post I’ll be sharing a rich and delicious recipe for Southern Caviar Pimento Cheese.
Pimento cheese is pure southern goodness! Southern Caviar, as it is sometimes referred to, pimento cheese spread is made with freshly grated cheeses and cream cheese for extra rich flavor.
We just love pimento cheese in the South. It’s so versatile and can be used as a spread, a dip, on sandwiches or tea sandwiches for your brunch or party, burger topping, on crackers. The possibilities are endless.
Like everything else in the south, pimento cheese recipes can vary. This is one of my go to recipes for this tangy cheese spread and it is always very well received.
My Southern caviar pimento cheese includes a variety of cheeses with just a kick of spice in every bite. A friend once said that this recipe is called Southern caviar because it costs a fortune to make but was just so delicious! HA! Maybe that’s a tad true.
There is also a wonderful classic pimento cheese recipe on the blog that is simple and made with just shredded cheddar if you prefer.
Ingredients:
- 8 ounce package Cream Cheese , softened
- 1 cup of Mayonnaise , I prefer Dukes
- Sharp Cheddar Cheese
- Monterrey Jack Cheese
- Colby Cheese
- Smoked Cheddar Cheese
- White Cheddar Cheese
- Pimentos, drained well
- Pinch of Salt
- Onion Powder
- Dash of Garlic Powder
- A few cracks of Black Pepper
- Dash of Cayenne (optional)
Pimento Cheese Spread
Begin by grating the cheeses and set aside.
With a hand mixer combine the mayonnaise and cream cheese until well blended.
Drain the pimentos then add them to the mayonnaise mixture along with the seasonings and mix to combine.
Next, add the grated cheeses and mix until everything is blended and creamy.
Easy as that! Store leftovers in the refrigerator in a covered container.
You can make variances and add bacon or jalapenos if you like to switch things up with your homemade pimento cheese.
If serving as dip as I’ve pictured – I serve with pita chips or crackers and sprinkle a little paprika on top.

Southern Caviar – Pimento Cheese
Ingredients
- 8 oz package Cream Cheese softened
- 1 c Mayonnaise I prefer Dukes
- 8 oz grated Sharp Cheddar Cheese
- 4 oz grated Monterrey Jack Cheese
- 4 oz grated Colby Cheese
- 4 oz grated Smoked Cheddar Cheese
- 4 oz grated White Cheddar Cheese
- 4 oz jar Pimentos drained well
- Pinch of Salt
- 1/8 tsp Onion Powder
- Dash of Garlic Powder
- A few cracks of Black Pepper
- Dash of Cayenne optional
Instructions
- Grate the cheese and set aside.
- Use a mixer to combine the mayonnaise and cream cheese.
- Next, add pimentos and the seasonings then mix to combine.
- Next, add the grated cheese and mix until everything is blended and creamy.
