Pork Medallions with Gravy

 

In this post I am sharing an easy Pork Medallions with Gravy recipe.

Delicious tender bites of pork in a gravy sauce. Perfect when served over rice or mashed potatoes. This easy recipe will help you have dinner on the table in no time on busy weeknights.

If you’re like me then you enjoy having a few options for preparing pork chops. These tasty pork bites are so good and the whole family loves this meal.

Ingredients

  • 2 tsp Olive Oil
  • 1 Onion, diced
  • 1-2 lbs Pork, cubed
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • 3 c Chicken Stock
  • 1 Packet Pork Gravy Mix, I used McCormick
  • 1 10.5 oz Cream of Onion Condensed Soup
A skillet or pot with a lid is recommended
 
Heat a large skillet over medium heat.
 
Add olive oil, diced onion, and cubed pork. I used boneless pork chops that I cut up.
 
Pork Medallions with Gravy
 
 
Saute until the onions become translucent and the pork is mostly cooked through, 5-7 minutes.
 
Season with salt, pepper and garlic powder.
 
Add chicken stock. Cover and simmer for 30 minutes.
 
Add gravy mix packet and stir to combine.
 
Add cream of onion soup and combine.
 
Cover and simmer on low for an additional 30 minutes, stirring occasionally.

These pork medallions with gravy would also be delicious served over mashed potatoes or hot buttered noodles. If you’re trying to save on your carbs then cauli rice or mashed cauliflower are also great options.
