Zesty Lime Shrimp Tacos

These shrimp tacos are fresh and light! Delicious and easy for a quick weeknight meal too.

I’m a big fan of shrimp and will take any opportunity to enjoy it but this recipe is also great with chicken or fish if that is more to your liking.

This is one of those meals that take just a few minutes to prepare because shrimp cooks up quick. For me it’s perfect during the sweltering months of summer when you don’t want to stand over a hot stove. 

The zest of lime and seasonings taste so light and fresh with the shrimp too so it is not too heavy on the tummy.

Ingredients

  • 1 lb Shrimp, fresh shelled and deveined and remove tails
  • 1 c Zesty Lime Vinaigrette Dressing , I used Kraft
  • 1/2 tsp Creole Seasoning
  • Pinch of Salt and Cracked Black Pepper to taste
  • 1 tsp Olive Oil
  • Soft Taco Shells, or crunchy if you prefer
  • Favorite Toppings
In a mixing bowl, combine dressing, creole seasoning, salt and pepper and whisk to combine.
 

Cilantro Lime Tacos

 
 
Add shrimp to to the marinade and refrigerate 30 minutes to 1 hour.

Healthy Shrimp Tacos

 
 
When ready to cook, heat a skillet over medium heat. Add 1 teaspoon of olive oil.
 
With a slotted spoon remove shrimp from marinade and add to skillet. It’s okay if some of the marinade stays on the shrimp. Discard any remaining marinade.

Easy Shrimp Tacos

 
 
Cook until shrimp have pinked, this will take 6-10 minutes. Add cooked shrimp to a bowl and assemble tacos with your favorite toppings.
 
Topping Suggestions: Shredded Lettuce, Fresh Cilantro, Guacamole, Shredded Cheese, Sour Cream, Salsa or Pico do Gallo. Garnish with limes for an extra citrus splash if desired.

Zesty Lime Shrimp Tacos

Fresh shrimp tacos made with a zesty lime marinade and a hint of Creole seasoning are perfect lighter fare. Serve with your favorite toppings and sides.
