Y’all aren’t going to believe how easy this recipe is. Busy parents rejoice because you won’t have to stand over a hot stove after a busy day and everyone will clean their plates.
Who doesn’t love tacos? Am I right?!? We sure do and this crock pot chicken tacos recipe is so delicious.
All that you need are three simple ingredients that you throw into your slow cooker for the Mexican shredded chicken filling.
When the slow cooker shredded chicken is ready just fill your favorite taco shells, we like soft flour tortilla shells for the chicken tacos, and add your favorite toppings.
So let’s taco bout it (terrible pun attempt)!
Best Crock Pot Chicken Tacos
Check out that delicious chicken filling! YUM! There is the juicy chicken taco meat, toasted tortillas, cheese tucked down in there and your usually fare of toppings.
It is mostly about the cheese for me (bonafide cheese-aholic here) but I also like shredded lettuce, some pickled jalapenos and a little dollop of sour cream. Maybe a little hot sauce.
Weird fact about me – I used to not like sour cream but now I do.
Crock Pot Chicken Tacos with Salsa
Before you head off into your busy day, add the chicken, seasoning and salsa to your slow cooker and let it do it’s thing.
I used boneless skinless breast pieces here but thighs would also be delicious in the mix.

After the crock pot chicken has simmered a few hours, take the chicken pieces out and shred the meat then add it back to the slow cooker and stir to combine everything together.

I want to mention that the amount of taco seasoning that you use is totally up to you. Some folks like using the entire envelope but I only use about half at a time these days.

What do you eat with chicken tacos? We find the tacos to be filling enough for us but a side of refried beans, corn or Spanish style rice would also be delicious with your taco dinner.
Can you put raw chicken in a slow cooker? Yes, but I prefer that the chicken is thawed beforehand.
Now just to decide what to drink with your crock pot chicken tacos….hmmm, a margarita sounds nice!

Easy Crock Pot Chicken Tacos Recipe
Ingredients
Crock Pot Chicken Taco Filling
- 16 ounce Jar of Salsa your favorite brand works, I used Pace
- 1 lb. Boneless Skinless Chicken Breast or thighs
- 1 Taco Seasoning Packet I use half
Chicken Taco Toppings
- Shredded Lettuce
- Shredded Cheese
- Chopped Tomatoes
- Pickled Jalapeno Slices
- Sour Cream

- Soft Flour Tortilla Taco Shells or crunchy if preferred
Instructions
Crock Pot Chicken Taco Filling
- Empty the jar of salsa in the bottom of the slow cooker then add the taco seasoning and stir. Add the chicken breast pieces; cover and cook on the low setting 5-6 hours.
- Remove the cooked chicken from the slow cooker and shred then return to the slow cooker; stir to combine with the rest of the ingredients.
Serving Crock Pot Chicken Tacos
- Warm the soft flour taco shells, if desired (I place them over the flame on my stove top for a minute then flip)
- Next, add some of the chicken filling along with your favorite taco toppings and enjoy.

You can use the regular taco size soft flour tortilla shells or use the mini size to make street tacos. A taco kit is also a great option as it will have the seasoning included and a packet of taco sauce if you prefer not to purchase everything separately.Nutrition
