Baked Ham and Egg Cups

Baked Ham and Egg Cups are an easy to prepare breakfast. Add some cheese if you please!


Breakfast cups bake in the oven, so they’re perfect for back to school mornings or when you have guests to feed. You can make one, or up to a dozen at a time, with minimal ingredients.

We all have those mornings where it’s busy and just don’t have time to stand over a stove, right? You still want to have a healthy breakfast. The oven does all of the work for you. With a muffin pan to add your ingredients to, you’re good to go!

Baked Egg Cups

Ingredients

  • Farm Fresh Eggs
  • Sliced Deli Ham
  • Shredded Cheddar Cheese (optional)

Preheat oven to 400℉

Add a slice of ham to each muffin cup, according to the number of servings needed.

Add a little shredded cheese if desired.

Crack in an egg.

Easy, right!?! Now into the oven for 12-15 minutes until the eggs are set as desired.

At 15 minutes in my oven, the yolks were mostly cooked through.

This morning I got a double yolker! Always a surprise to crack open an egg and get two yolks.
 
Serve with a slice of toast or for a carb free option, serve with a side of fruit.
 
A delicious and nutritious meal! Best of all, you have time to deal with other things while breakfast bakes…..like finding lost books and shoes.
