Holiday Brie en Croûte Recipe

In this post I am sharing how to make a Holiday Brie en Croute.

What is Brie en Croute? It’s just a fancy pants way of saying a wheel of brie baked in some type of pastry.  😉 A refrigerated pie crust or puff pastry work well for this.

This is a super easy and delicious appetizer that can be adapted for any special occasion gathering and it dresses up so well for the holidays with colorful cranberry.

Serve alongside a platter of crostini or crackers and watch the smiles as folks dig into this wonderful appetizer. Personally, I prefer serving with the small toasted crostini bread pieces because they are more sturdy.

How to Eat Brie

Brie is a soft cheese that is made from cow’s milk. It is perfectly delicious served just as it is with crackers or part of a charcuterie board with meats and fruits.

A wheel of brie will come in a rind, which is edible. In fact…you’re supposed to eat the rind too but it is up to you if you’d rather not partake.

Baked brie is a favorite for my appetizer menu. The warm melted cheese is perfect on cool winter evenings.

How Do You Make Brie en Croute?

Preparing Brie en Croute is very easy. In fact it is one of the easiest appetizers you’ll ever make.

Here’s what you’ll need: refrigerated pie crust (or puff pastry dough), a wheel of brie, and egg, a smidgen of water and to top things off…some homemade cranberry sauce. The cranberry sauce is completely optional but it adds so much holiday color and works so well with the brie.

You’ll also want some crostini for serving, which can be store bought or homemade.

Brie en Croute Cranberry

Prepare the basic cranberry sauce the day before and refrigerate. Although you’ll only need a small amount of the cranberry sauce, the leftovers may be frozen until needed for your holiday dinner.

Okay, let’s prepare this appetizer!

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 1: Allow the refrigerated pie dough to warm to room temperature, then roll it out on the lined baking sheet. Place the wheel of brie cheese in the center of the pie dough and fold up all of the edges, slightly pinching them together to ensure it stays in place.

Step 2: Make an egg wash with 1 egg whisked together with a teaspoon of water (or milk) until combined. Use a pastry brush to glaze the pie dough with the egg wash.

Bake 20 to 25 minutes until golden brown.

Transfer to a serving dish and top with the cranberry sauce. Garnish with fresh rosemary and cranberries if desired for a festive holiday look and serve alongside crostini.

I was so excited to make this for my family for Christmas dinner appetizer. I felt I followed the directions to the letter…made sure edges were sealed…egg washed….but somehow, all the brie seeped out during cooking…quel disaster! Plus, I will never use Pillsbury PIe Crust again…they have changed something, and it tasted BITTER…..I might try this again but with either puff pastry dough or crescent dough, although maybe not - it was an incredible waste of money and most of it went in the trash can…. I don’t know what I did wrong, but it was just awful, and I hated to waste that good brie….

I'm so sorry that happened. A bit of the cheese oozing out may happen but can still be served but it sounds like yours was a bit worse. I prefer the Wewalka refrigerated pie crust and suggest trying that one or their refrigerated puff pastry. Great products.
