In this post I am sharing an easy no fuss dessert…Holiday Cranberry Apple Bake.

‘Tis the holiday season and that likely means rich desserts. After a few heavy holiday meals you may be searching or something a tad lighter.

Holiday Cran-Apple Bake is the perfect solution. This easy fruity dessert is like a crisp with colorful seasonal fruits. Very festive for holiday meals or the new year’s first dinner.

Bright claret cranberries add colorful and offer a slight tartness that blends so well in each bite with the sweet apples and oat topping.

How Long Do Fresh Cranberries Last?

By the way….did you know that fresh cranberries freeze well? They sure do, so when they hit the market buy a few bags to keep in the freezer to enjoy for more than just holiday cranberry sauce recipes.

I generally buy at least six bags to have on hand. This gets me through Thanksgiving, Christmas, the new year as well as a few more dinners or desserts throughout the year.

You’ll love the sweet, tart, and crunchy deliciousness of this apple cranberry crisp. The leftovers are delicious too, just refrigerate and eat cold. It’s so yummy!

Of course nothing beats when it’s warm from the oven…and dare I say that a scoop of vanilla ice cream would pair quite well with this fruit and berry cobbler.

What will I need for this recipe? Here’s what you’ll need to make this easy baked dessert (you’ll find the full printable recipe card further down in this post) and I’ll share step by step how to put it all together: apples, fresh cranberries, sugar (granulated and brown), butter, oatmeal, flour and pecans. 

Apple Cranberry Cobbler with Pecans

Preheat oven to 350°F (176°C)

Step 1: Grease a 9 x 13 baking dish with a tablespoon of butter and set aside. Next, prepare the filling by adding the chopped apples and cranberries to a large mixing bowl then toss with the brown sugar and granulated sugar to coat. Add the apple cranberry mixture to the baking dish.

Step 2: Prepare the topping by adding the melted butter, brown sugar, oatmeal, flour and chopped pecans to a small mixing bowl and stirring well to combine. Spread the topping mixture over the apples and cranberries in the baking dish.

Bake for 45 minutes, until hot and bubbly and the topping is browned.

Allow to cool slightly before serving.

I had enough to share some of this wonderful dessert with the neighbors too and they were delighted with how delicious it is.

Holiday Cranberry Apple Bake

Ingredients

Cranberry Apple Filling

  • 6 c Honey Crisp Apples peeled and chopped (3 large apples)
  • 12 oz Fresh Cranberries
  • 1/2 c Granulated Sugar
  • 1/2 c Brown Sugar packed

Topping

  • 1 Stick of Butter melted
  • 1 c Brown Sugar packed
  • 1.5 c Old Fashioned Oats
  • 1/2 c All Purpose Flour
  • 1/2 c Chopped Pecans

To Prepare Baking Dish

  • 1 tbs Butter

Instructions

  • Preheat oven to 350°F.
  • Grease the baking dish with a tablespoon of butter.
  • In a large mixing bowl, combine the chopped apples, fresh cranberries and sugars together the add the fruit mixture to the baking dish.
  • Prepare the topping in a smaller mixing bowl by combining the melted butter, brown sugar, oatmeal, flour and pecans then spread on top of the fruit mixture in the baking dish.
  • Bake for 45 minutes.
  • Allow to cool slightly before serving.
  • May be served warm or chilled.
