In this post I am sharing how to make easy Ham, Egg & Cheese Breakfast Cups.

This simple breakfast cup recipe is so useful in many ways for many reasons. I love a handy recipe, don’t you?

First, this simple breakfast recipe is great for serving guests and using up some leftover holiday ham. After a big holiday meal, every hostess needs an easy fix breakfast recipe under her belt. 

These breakfast cups or muffins can also be called mini crustless quiche, which would be great for parties. Wanna get a little bit fancier? Call them mini frittatas.

These delicious egg cups are great on their own or serve with a side of fresh fruit for a healthy low carb meal. It may make everyone feel better having something on the healthy side after a big holiday dinner.

You only need four ingredients, plus a little salt and pepper to make these ham and egg quiche cups: Ham, Cheese, Milk and Eggs.

Easy breakfast options for overnight guests - Egg Cups - Holidays

Preheat oven to 350° F

Step 1: Add a little bit of the chopped ham and shredded cheese to each cup of your baking dish.

A standard cupcake pan or muffin tin will work fine. I’m using a Wilton Perfect Muffin Top baking pan (I’ve shared a link to the pan in the recipe card) which has shallow wide cups. I love this pan especially for cooking eggs, like in this recipe, or just adding an egg to each section to bake for breakfast sandwiches. 

Keep in mind, if you’re using a standard muffin pan to adjust cooking times as needed.

Step 2: In a measuring cup add the milk, then the eggs and whisk to combine. Pour the scrambled egg mixture into each section with the other ingredients. Next, season each section with a bit of salt and pepper to suit your taste.

Bake 10-15 minutes, or until set. Mine took about 12 minutes. 

Serve hot.

Ham Egg & Cheese Breakfast Cups

Easy ham, egg and cheese breakfast cup muffins are a delicious quick fix meal. These breakfast cups are great for feeding guests.

Ingredients

  • 1/2 c Chopped Ham
  • 1/2 c Sharp Cheddar Cheese grated
  • 1/4 c Whole Milk
  • 4 Eggs
  • Salt and Cracked Black Pepper to taste

Instructions

  • Preheat oven to 350°F
  • Add some of the chopped ham and grated cheese to the sections of a muffin pan.
  • Next, add the milk to a liquid measuring cup then crack in the eggs. Whisk to combine thoroughly.
  • Pour the egg mixture to each section with the other ingredients then season with salt and pepper.
  • Bake 10-15 minutes, or until set.
  • Serve hot.
