Easy Baked Pork Chops and Rice Casserole Recipe

Hey y’all! I’ve got a recipe that’s gonna make your taste buds dance and your family smile. We’re talking about an Easy Baked Pork Chops and Rice Casserole Recipe. 

This dish is so comforting and so simple to put together. This dump and bake no peek casserole is an old fashioned favorite.

With tender, juicy boneless pork chops nestled in a creamy flavorful rice mixture then all baked to perfection.

This is one of those easy meals that busy moms love. Well, anyone really who just wants something delicious and home cooked without a lot of fuss.

So let’s head into the kitchen and make ourselves a delicious easy baked pork chops and rice casserole!

Pork Chop and Rice Casserole

Y’all, this humble no full meal is delicious. The rice is creamy and tender and the seasoned pork chops are perfectly cooked all in a casserole dish. 

I cook most of our meals. We just prefer home cooked food. This is the type of meal that was a go to for me when I was working outside the home or on days where we are super busy…like doing yard work and stuff.

We all need an easy recipe collection for busy days, right? Sure we do!

What to serve with Pork Chops and Rice Casserole?

These days we don’t eat really heave meals, so the pork chops and rice would be it for us. Appetites vary however, and if you have teens in your house, then you’ll likely want to add something more to the meal.

  1. Steamed Broccoli – a favorite side at our house. I’ve even thrown the broccoli into the casserole and let it cook too. I do prefer it steamed however.
  2. Side Salad with your favorite salad dressing
  3. Buttermilk Biscuits or Cornbread
  4. Southern Green Beans – Simmered low and slow for that down home goodness.
  5. Coleslaw – for a bit of crunch and delicious flavor.
  6. Cucumber Salad – so fresh and delicious, especially on the warmer days of the year.

And don’t forget about a lil something sweet, like chilled applesauce salad to finish off a delicious meal.

Pork Chop Rice Casserole Ingredients

Here is what you’ll need to make this easy dinner recipe that even picky eaters will love:

  • Long Grain White Rice – makes the perfect creamy rice for this dish. If you prefer to use brown rice then you may want to pre-cook the rice for the casserole since it takes longer to cook that white rice.
  • Whole Milk – adds to the creamy richness of the casserole. Water or chicken broth could be used instead, if preferred.
  • Cream of Celery Condensed Soup – this is a favorite for cooking! Any of the creamed soups could be used really (cream of mushroom soup, cream of onion soup, cream of chicken soup), so just use whichever you have on hand
  • Boneless Pork Chops – a tad on the thicker side so they stay nice and juicy. If you only have thin pork chops on hand then use those. In case you’re wondering, yes bone-in pork chops would work fine also.
  • Kosher Salt
  • Cracked Black Pepper
  • Garlic Powder
  • Onion Powder
  • Paprika

These simple ingredients will create a wonderful casserole. Remember y’all, home cooked meals never have to be complicated to be delicious.

Preparing the easy Pork Chop Casserole

The first step is to pre-heat the oven and to get the pork chops seasoned. Combine the seasonings together and liberally add the mixture to each side of your pork chops.

Set the pork chops aside and move on to the next step.

The Creamy Rice Mixture

Next, prepare the rice mixture for the pork chop rice recipe. In a medium size mixing bowl, add the un-cooked white rice, cream of mushroom condensed soup, and milk.

Combine that creamy Rice Mixture

Then use a whisk to thoroughly combine the rice mixture.

Easy Optional Step but Recommended for Added Flavor

Okay y’all, I know I said dump and bake, which you can totally do, but there is one teeny little optional step that I like to do.

This optional step takes about three minutes but adds nice color and more flavor to the seasoned pork chops.

Sear the pork chops, for a minute or so, on each side on a hot griddle or in a hot large skillet. It really is a super fast way to add a bit of extra flavor to your casserole. 

I do this extra step 99% of the time, but occasionally I don’t and just throw everything into the casserole dish and call it a day. So, up to you.

Country Pork Chop Casserole Bake

The next step is to lightly spray a rectangle (like 13×9) baking dish lightly with a bit of cooking spray, then pour the rice mixture into the dish.

Transfer the pork chops into the baking dish, arranging them however you like on top of the rice mixture.

Into the Oven to Bake

Cover the casserole with aluminum foil then into the oven to bake. No peeking now, you hear!

Cooking time may vary according to different ovens, but in my gas oven, it takes an hour. That is another one of my favorite things about this recipe is that it is easy to put together and cooks up quick while you do other things.

So that is an easy meal on the table in no time at all.

The rice should be tender and the pork chops should have an internal temperature of 145°F or higher to be done.

Ingredients

  • 1 cup Long Grain White Rice – un-cooked
  • cup Whole Milk
  • 10.5 ounce Cream of Celery Condensed Soup undiluted
  • 4 Boneless Pork Chops I used chops about an inch thick
  • ½ teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Paprika

Instructions

  • Preheat oven to 350°F (177°C)
  • In a mixing bowl; combine the rice, milk, and cream of celery soup using a whisk.
  • Lightly spray a rectangle baking dish (13×9 or similar) with cooking spray.
  • Transfer the rice mixture into the prepared baking dish.
  • In a small bowl, combine the seasonings together, then season both sides of the pork chops well. This should be enough seasoning mixture for four pork chops.
  • Optional, but recommended, sear the seasoned pork chops for a minute or so on both sides on a hot griddle or in a hot large skillet. They aren't cooking through, just searing for color and added flavor.
  • Place the pork chops on top of the rice mixture then cover the baking dish with aluminum foil.
  • Place into the preheated oven and bake for 1 hour, or until done.

Notes

Seasonings can be adjusted to suit own taste.
