In this post I will be sharing a classic easy corn dip appetizer recipe that is so delicious and takes just a few minutes to put together.
I love creamy dips and they seem to always be a big hit at gatherings. This corn dip can be made ahead and is perfect when served with tortilla chips, the scoop style corn chips, or bagel chips.
I should mention that this is an old fashioned style corn dip that is served cold. If you do make it ahead then it can be stored in an airtight container in the refrigerator until ready to serve.
Cold Corn Dip
Doesn’t that look delicious? I want to grab one of those chips and dig into that wonderful sweet corn dip! It is so good.
You will love it! So will your guests. It is always a crowd pleaser and a perfect appetizer to serve at a pool party, birthday parties, family reunions, holiday gatherings, or baby showers.
This dip is sure to be a huge hit at game day watch parties too. Since this is a cold corn dip then you may find it especially refreshing for summer parties.
What is Corn Dip Made Of?
I think this is the best corn dip because it is so simple to prepare. As I mentioned before, this is an old school style corn dip. Here’s what you’ll need for this easy recipe:
- Sweet Corn – I use canned whole corn kernels. If you have fresh corn available then you can cut the kernels off the cob and use that if you like.
- Pimentos – drained.
- Green Bell Pepper – the diced green bell peppers offer additional sweet flavor and color to the dip.
- Red Bell Pepper – the diced red peppers give a nice pop of color and flavor.
- Grated Onion – I use grated yellow onion. A little goes a long way. You could use sliced green onions or petite diced red onions if you like that better.
- Salt – I only use a little salt to enhance the sweet flavor of this dip. If you want to add other seasonings or black pepper then feel free to do so to suit your tastes.
- Dressing – a combination of mayonnaise, sour cream and softened cream cheese. Using full fat ingredients make the dip rich in flavor. If you wish to cut some of the fat then you could use Greek yogurt to replace the half cup mayonnaise in the recipe. I do feel that the combination of the cream cheese with the tangy flavor of the mayo and sour cream give the best results and make it wonderful.
You will also need tortilla chips, scoops, toast points or sturdy potato chips for dipping. Whatever you like best will do.
Creamy Corn Dip
This first thing that I like to do is place a colander in a small bowl and allow the corn to drain very well while I work on the rest of the prep. Do the same with the pimentos. You want both drained really well.
Next, I make the creamy dressing. It is best to use cream cheese that has softened to room temperature. If you forget to put it out ahead then it can be softened in the microwave.
Place the softened ounces of cream cheese in a medium size mixing bowl along with the sour cream and mayonnaise. Oh, and before I forget to mention it…use a real mayonnaise and not that salad dressing whip.
Use a hand mixer to combine the creamy dressing mixture.
How to Make Corn Dip?
The next step is to add the remaining ingredients to the dressing mixture. Add the drained corn, diced bell peppers, drained pimentos, grated onion and salt to the mixing bowl.

Use a spatula to combine all of the ingredients together until the corn mixture is coated in the creamy dressing.
The creamy corn dip can be left in the large bowl and covered with plastic wrap then chilled in the refrigerator until ready to serve.
Since there is a bit of cream cheese in the creamy dressing, I like to take the corn dip out of the fridge and let it sit at room temperature for a few minutes.
Give the dip a stir to redistribute the dressing then transfer it to your favorite serving dish.
What to Serve with Corn Dip?
Serve the corn dip with restaurant style tortilla chips (or make your own), corn chip scoops, bagel chips, sturdy potato chips, or toast points.

Easy Corn Dip Appetizer Recipe
Ingredients
- 2 – 15.25 ounce Canned Whole Kernel Corn drained well
- 4 ounce Jar Chopped Pimentos drained well
- 3 ounces Cream Cheese softened to room temperature
- ½ cup Real Mayonnaise I prefer Duke’s Mayonnaise
- ¼ cup Sour Cream
- 1 Green Bell Pepper diced
- 1 Red Bell Pepper diced
- 1 tablespoon Onion grated (about half a small onion)
- ½ teaspoon Salt or to taste
Instructions
- In a medium to large mixing bowl, cream together the cream cheese, mayonnaise, and sour cream using a hand mixer.
- Next, add the remaining ingredients to the creamy dressing mixture then use a spatula to combine everything together.
- Cover the bowl with plastic wrap and chill in the refrigerator until ready to serve.
- Remove the corn dip from the fridge a few minutes before serving, stir to redistribute the dressing, then transfer to a serving dish.
- Serve the corn dip with tortilla chips, melba toast, party rye, bagel chips or other favorite chips for dipping.

Other Variations You Might Enjoy
These days, a Mexican corn dip recipe or a Mexican street corn dip (sometimes called fiesta corn dip), are popular. Here are some ingredient options if you want to try those variations.
- Lime Juice
- Green Chilies – canned or fresh (aka green chiles)
- Diced Jalapeno Peppers
- Can of Rotel
- Fresh Cilantro
- Other seasonings – like a teaspoon of chili powder, garlic powder, or cumin
- Give it a little kick and adjust the spice level with hot sauce or a few dashes or ground cayenne pepper
A corn dip can also be transformed into a bit of a cheesy dip with the addition of your favorite cheeses, such as, pepper jack, cheddar cheese, monterrey jack cheese, cotija cheese, or other Mexican cheeses.
We really love Oaxaca cheese in our Mexican inspired dishes. It is a great melty cheese too and would be great for topping the corn dip if you desire to make a hot corn dip recipe by baking it in the oven for a bit.
Storing Leftover Corn Dip
If you have leftover dip, it will store 3-4 days in the refrigerator in an airtight container or covered dish. As I mentioned before, this dip can also be enjoyed as a tasty side dish, so don’t let it go to waste.
